Clean, fresh and lively, this is pure, unoaked Chardonnay that just cries out for good seafood. The raciness is there, along with a generous amount of fruit. Straw yellow, apricot and apple flavours creep up the nose. Hints of strawberries, pear, vanilla, paired with gentle acidity, good structure.
Try with oysters/ seafood, or if available, Gougeres (Chablis’ tasty cheese pastries). 13% ABV.

Guy Mothe built up the highly successful Domaine du Colombier by starting with a tiny holding and then acquiring small parcels of land that came up for sale over the years, culminating in 33 ha of vineyards. Today the domaine is run by Guy`s son, Thierry. Most of the vineyards are dedicated to the production of AC Chablis, though there are significant holdings in 1er Cru Fourchaume and Grand Cru Bougros. The straight Chablis benefits from vines grown on the Grand Cru side of the river, giving them a buttery richness which balances their natural acidity.
